Lemon Blueberry Muffins with Pecan Crumble (sms)


Chaya of Sweet and Savory hosted this week’s recipe
Orange Blueberry Muffins with Pecan Crumble
from the book, The Sweet Melissa Baking Book found on pages 5 through 7.


In my recipe, I switched out the orange zest for lemon zest in making the muffins.

Off to the oven the muffins go…


My favorite part of these muffins is the crumble! Pecans add a wonderful taste to the crumble.

I know what you mean about the crumble. I could scrape it off and eat it in a bowl with milk! I love lemon with blueberry, Im sure they tasted yummy!
Your picture with the Bake sale sign is awesome! Your hair is dark and curly like mine(well when I don't straighten it! Beautiful!!

That is really a very nice combo, blueberries go perfectly well with lemon, then if you add pecan, hmmm I can just imagine how great it must taste!

MMMmmm... those are some gorgeous muffins, Carmen! Good call with the zest switch- although the orange was a nice change of pace, you can't go wrong with the classic combo of lemon + blueberries.

Thanks for your advice on the coconut custard pie... I did search a few other recipes on the internet, but there seemed to be some conflicting information about how to determine done-ness. Some recipes suggest baking it all the way through, while others want there to be a little jiggle in the center. But after all that, I wasn't able to make my pie/tarts for Mother's Day because I wasn't feeling well. I did roll out my crust, but because I was still nervous about the baking time, I chickened out, and put it in a 9" pie plate. It's waiting in the freezer (since I have to make bread pudding first!) Which reminds me, thank you SO much for all the tips you left on the P&Q- I'll definitely be using them :) That was very thoughtful of you, but it doesn't surprise me that you'd be so forthcoming with your help- it's definitely in keeping with your character!
