Pumpkin Whoopie Pies

Try as we might, we were never huge fans of the traditional whoopie pie. We love the concept of two cakey chocolate cookies with a fair amount of cream sandwiched between them, but every execution we tried was always less than desirable. Maybe it was the cream filling with the shortening aftertaste. May be it was the too-wet cookie itself. After all, there is such a thing as being too moist. So we took some liberties with the whoopie pie and created our own version, which was named one of the top 100 tastes of 2007 by Time Out New York. Our Pumpkin Whoopie Pie makes the perfect midnight snack, with its soft, cakelike cookie and chilled cream cheese filling. For bite-sized pies, use a melon baller to scoop the dough.

Yield : 12 WHOOPIE PIES

INGREDIENTS:

For the pumpkin whoopie cookies
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
2 tablespoons cinnamon
1 tablespoon ginger
1 tablespoon cloves
2 cups firmly packed dark brown sugar
1 cup vegetable oil
3 cups chilled pumpkin puree
2 large eggs
1 teaspoon pure vanilla extract

For the cream cheese filling
3 cups confectioners’ sugar
½ cup (1 stick) unsalted butter, softened
8 ounces cream cheese, softened
1 teaspoon pure vanilla extract

DIRECTIONS:

MAKE THE PUMPKIN WHOOPIE COOKIES

1. Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper.

2. In a large bowl, whisk the flour, salt, baking powder, baking soda, cinnamon, ginger, and cloves together and set aside.

3. In a separate bowl, whisk the brown sugar and oil together until combined.

4. Add the pumpkin puree and whisk to combine thoroughly.

5. Add the eggs and vanilla and whisk until combined.

6. Sprinkle the flour mixture over the pumpkin mixture and whisk until completely combined.

7. Use a small ice cream scoop with a release mechanism to drop heaping tablespoons of the dough onto the prepared baking sheets, about 1 inch apart.

8. Bake for 10 to 12 minutes, until the cookies are just starting to crack on top and a toothpick inserted into the center of a cookie comes out clean.

9. Remove from the oven and let the cookies cool completely on the pan while you make the filling.

MAKE THE CREAM CHEESE FILLING

1. Sift the confectioners’ sugar into a medium bowl and set aside.

2. In the bowl of an electric mixer fitted with the paddle attachment, beat the butter until it is completely smooth, with no visible lumps.

3. Add the cream cheese and beat until combined.

4. Add the confectioners’ sugar and vanilla and beat until smooth.

5. Be careful not to overbeat the filling, or it will lose structure.

6. (The filling can be made 1 day ahead. Cover the bowl tightly and put it in the refrigerator. Let the filling soften at room temperature before using.)

ASSEMBLE THE WHOOPIE PIES

1. Turn half of the cooled cookies upside down (flat side facing up).

2. Use an ice cream scoop or a tablespoon to drop a large dollop of filling onto the flat side of the cookie.

3. Place another cookie, flat side down, on top of the filling.

4. Press down slightly so that the filling spreads to the edges of the cookie.

5. Repeat until all the cookies are used.

6. Put the whoopie pies in the refrigerator for about 30 minutes to firm up before serving.

7. The whoopie pies will keep for up to 3 days, on a parchment-lined baking sheet covered with plastic wrap, in the refrigerator.

Baked Note
Make sure you chill the pumpkin puree thoroughly before making this recipe. The chilled puree will make your whoopies easier to scoop and give them a domed top.

MAKE THE PUMPKIN WHOOPIE COOKIES

Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper.

In a large bowl, whisk the flour, salt, baking powder, baking soda, cinnamon, 2 tablespoons pumpkin spice (my choice of spice) together and set aside.


In a separate bowl, whisk the brown sugar and oil together until combined.


Add the pumpkin puree and whisk to combine thoroughly.

Add the eggs and vanilla and whisk until combined.

Sprinkle the flour mixture over the pumpkin mixture and whisk until completely combined.

Use a small ice cream scoop with a release mechanism to drop heaping tablespoons of the dough onto the prepared baking sheets, about 1 inch apart.


Bake for 10 to 12 minutes, until the cookies are just starting to crack on top and a toothpick inserted into the center of a cookie comes out clean.

Remove from the oven and let the cookies cool completely on the pan while you make the filling. I then transferred the cookies to a cookie rack.

Pumpkin Chocolate Chip Loaf

Our Pumpkin Chocolate Chip Loaf recipe came to our bakery via Matt’s mother, Gail. She was neither a cook nor a baker nor a kitchen hobbyist (she preferred ordering in), but she enjoyed making this quick bread, as it is extremely easy and the results are impressive. The loaf is incomparably moist, and the pumpkin and chocolate chips pair well together for the perfect accompaniment to a hot cup of coffee or tea.

Baked Note: This recipe does not require a mixer. It is simple and quick, and the ingredients can be whisked together by hand. Also, this loaf freezes extremely well, so feel free to double the recipe and make a few extra loaves.

yields: 2 (9-by-5-by-3-inch) loaves

3¼ cups all-purpose flour
2 teaspoons cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground allspice
½ teaspoon ground ginger (optional)
2 teaspoons baking soda
2 teaspoons salt
1¾ cups (one 15-ounce can) pumpkin puree
1 cup vegetable oil
3 cups sugar
4 large egggs
1 teaspoon pure vanilla extract
1½ cups (12 ounces) semi-sweet chocolate chips

DIRECTIONS:
1. Preheat the oven to 350°F.

2. Butter two 9-by-5-by-3 inch loaf pans, dust them with flour, and knock out the excess flour.

3. In a large bowl, whisk together the flour, cinnamon, nutmeg, allspice, ginger, baking soda, and salt.

4. In another large bowl, whisk together the pumpkin puree and oil until combined.

5. Add the sugar and whisk again.

6. Whisk the eggs into the mixture, one at a time, followed by the vanilla.

7. Add ⅔ cup room-temperature water and whisk until combined.

8. With a rubber spatula, stir in the chocolate chips.

9. Fold the dry ingredients into the wet. Do not overmix.

10. Divide the batter between the prepared pans.

11. Gently knock the bottom of the pans against the countertop to even out the batter.

12. Use the spatula to smooth the tops.

13. BAKE in the center of the oven until a toothpick inserted into the center of a loaf comes out clean, 1 hour and 15 minutes to 1 hour and 30 minutes, rotating the pans halfway through the baking time.

14. Transfer the pans to a wire rack and cool for 15 minutes.

15. Invert the loaves onto wire racks and cool completely before serving.

16. The loaves will keep for 3 days, wrapped in plastic wrap, at room temperature.

In a large bowl, whisk together the flour, cinnamon, nutmeg, 1 ½ teaspoon pumpkin spice (my variation in spices), baking soda, and salt.

In another large bowl, whisk together the pumpkin puree and oil until combined.

Add the sugar and wisk again.

Whisk the eggs into the mixture, one at a time, followed by the vanilla.

Add ⅔ cup room-temperature water and whisk until combined.

With a rubber spatula, stir in the chocolate chips.


Fold the dry ingredients into the wet. Do not overmix.

Divide the batter between the prepared pans.

Gently knock the bottom of the pans against the countertop to even out the batter.

Use a spatula to smooth the tops.
