FOOD OF OUR OWN DESIGN~ baking in a commercial kitchen

It's Wednesday, June 3rd, 2009, 11 a.m. I'm finally baking in a commercial kitchen!

I am at a company called FOOD OF OUR OWN DESIGN.
It is located in Maplewood, NJ. Tim is the owner of this establishment.
He is very helpful and knowledgeable. I look forward to baking here often!

Here I am baking coconut cupcakes as Tim looks on.



Tim's business, FOOD OF OUR OWN DESIGN, specializes in fancy Italian cakes as well as pastries, brownies, crunch bars and custom cakes. It's a great resource for your kid's birthday party.

Today, I baked Coconut Cupcakes
by Barefoot Contessa (Ina Garten)
as a test run to see how it would turn out in a commercial oven.


Now to baking...
Check out the huge mixer and paddle used to mix the
cupcake batter...nothing like my small kitchenaid mixer.

Batter is ready to be transferred to cupcake liners.



Off to the oven to bake...


Today was a success. A good day.

For that I am grateful. :)

Caipirinha or Mojito Cupcakes or just the cocktail?

So, if your favorite cocktail is a Caipirinha or a Mojito...check it out...now you can make cupcakes too!



How do you make a Caipirinha?
(pronounced kai-pee-reen-yah)

2 teaspoons sugar or 1 oz simple syrup
1 lime cut in quarters
2 oz Agua Luca (or any brand of Cachaca you prefer)
Ice

Muddle sugar and limes in a shaker thoroughly.
Add Agua Luca and cracked ice.
Shake vigorously and pour contents of shaker, including ice, into glass.
Garnish with a lime wedge.


How do you make a Mojito?
(pronounced moe-hee-toe)

Ice
6 ounces light rum (Bacardi)
12 mint sprigs, or spearmint, 8 roughly broken apart
6 tablespoons fresh lime juice
4 tablespoons sugar
Club soda
4 slices lime

Place ice in beverage shaker.
Add in the rum, 8 broken up mint sprigs, lime juice and sugar.
Shake well and serve over ice in a high ball glass.
Top off each glass with a splash of club soda.
Garnish each with a slice of lime and a sprig of mint.


Ok, need to put the drink down so you can make cupcakes. :)


Here are several websites which have the recipe for Mojito Cupcakes.
When making Caipirinha cupcakes, just omit the mint. Use Cachaca instead of Rum.
