Beignets ~ Can’t Have Just One


Summertime brings to mind a few traditions. Going to the beach and enjoying walks on the boardwalk. It’s a time for carnivals and festivals. Funnel Cakes are usually sold at these venues. A spin on the funnel cake is a Beignet.

Fried dough that is near and dear to Louisiana is the Beignet. These square shaped yeast doughnuts are sprinkled generously with confectioner’s sugar. A cup of Café au Lait is a great compliment to these delicious pillows of goodness.

 “A beignet, (French for "fried dough") in the U.S. is a pastry made from deep-fried dough, much like a doughnut, and sprinkled with confectioner's sugar, or frostings. In the US, beignets are associated with the city of New Orleans where they are served at restaurants such as Café du Monde. They are also the official state doughnut of Louisiana.”

Homemade Mardi Gras Beignets

Adapted by Carmen Ortiz of Baking is my Zen

Ingredients

1 1/2 cups lukewarm water (110-115 degrees Fahrenheit)
1/2 cup granulated sugar
1 envelope active dry yeast (1/4 oz)

2 eggs, slightly beaten
1 1/4 teaspoons salt
1 cup evaporated milk

6 1/2 cups flour (3 cups + 3 ½ cups)
1/4 cup shortening
Nonstick spray (I use PAM brand)

Cottonseed oil, for deep-frying (I use canola oil)
Confectioner’s sugar

Directions

1.      Wisk together water (110-115 degrees), sugar, and yeast in a large bowl and let sit for 12 minutes to bloom.
2.      In another medium bowl, wisk the eggs, salt and evaporated milk together.
3.      Pour egg mixture into the yeast mixture and wisk together.
4.      Wisk 3 cups of the flour into the egg and yeast mixture.
5.      Add shortening and continue to stir with a wisk to break up most of the shortening pieces into the batter.
6.      Mix while adding the remaining 3 ½ cups flour. Dough will be sticky.
7.      Remove dough from the bowl, place onto a lightly floured surface and knead until smooth. Lightly flour your hands to make working with dough easier.
8.      Spray a large bowl lightly with nonstick spray.
9.      Put dough into the bowl. Then, turn dough, oiled side up, and cover with a towel.
10.  Let rise at room temperature for at least 2 hours. (Tip: Heat the oven to 200 degrees. Turn off oven.  Place the dough in the oven to proof.)
11.  Preheat oil in a deep frying pan to 370 degrees F. (Tip: Use the count test to determine if the oil is hot enough. Drop a test beignet into the oil; if the beignet rises to the top of the oil within eight seconds, the oil is ready.)
12.  Roll the dough out to about 1/4-inch thickness and cut into small squares.
13.  Use a pizza roller for straight lines, or cookie cutters for fun shapes.
14.  Deep-fry until they turn golden, flipping or basting to allow even cooking.
15.  After the beignets are fried, drain briefly on paper towels, then transfer to a tray and cover generously with sprinkled powdered sugar.
16.  Serve warm.

(I use a Fry Daddy. It’s an electric deep fryer.)

Grilling and Chilling on Father’s Day


It’s June 19, 2011, Father’s Day!
This is a day where many families enjoy time together over a barbecue lunch or dinner.
It’s a day to honor dad!

A memory for me and my dad that I’ll always cherish was when I was around fourteen years old. One day, I just said out loud, to the airwaves, not to anyone specific, “I would love to play guitar”. Apparently, I didn’t know it, but my dad overheard me. That Christmas, my dad surprised me with a guitar. I was so happy, words couldn’t express. My dad knew how to play guitar and taught me the basics. Playing guitar was not only a great pastime for me, but playing my guitar made me happier when I was happy and it pulled me out of sadness if I was sad. My day started by playing guitar…literally…I would get up out of bed, pick up my guitar and play songs. I learned how to play guitar quickly. As a result, I sang and played guitar in high school concerts, at mass in church and then progressed to wedding ceremonies. I’ve met so many people through music. The musical path in my life was definitely one I will never forget. I was so blessed to have been able to share music with others.

Daddy…thank you for hearing me that one day…it changed my life forever. Love you!

When you think of Father’s Day,
you think of barbecue, right?

It’s all about
Grilling and Chilling
grilling burgers and chilling with a beer or cocktail.

I’ve always wanted to learn how to barbecue. So, I’ve decided to start with burgers. I made sliders which are just a word for ‘small burgers’.

You can adorn your burger with whatever you like. No rules! Sliders should be on a soft roll. At least, that’s how I like it. I used potato bread for my sliders.
 I added sharp cheddar cheese, a bit of ketchup and grain mustard. So good!

Watermelon is bountiful in the summer months. Thought I’d make a cocktail using this fruit. You can check out the recipe by Sunny Anderson of the Food Network and my adaptation below.




Watermelon Mojito

I adapted the recipe by scaling back on the mint leaves by using 1-2 leaves. I like just a hint of mint. I also scaled back on the white rum. I used simple syrup instead of agave syrup.

Total Time: 10 min
Prep: 10 min
Yield: 4 servings
Level: Easy

INGREDIENTS:
2 1/2 to 3 pounds watermelon flesh, pits removed
1/2 cup fresh lime juice
1/4 cup packed mint leaves, plus more for garnish
2 1/2 cups white rum
1/4 cup agave syrup

Directions:

In a blender, puree watermelon, fresh lime juice and mint in batches until smooth.
Strain into a pitcher.
Mix in rum and syrup.
Serve in glasses filled with ice and garnish with mint leaves.
